Title: Study the electro-viscous effect on stability and rheological behavior of surfactant-stabilized emulsions

Abstract: The electro-viscous effect on stability and rheological behavior of oil-in-water (o/w) emulsions stabilized by an anionic surfactant (sodium dodecyl benzene sulfonate, SDBS) was studied by altering the emulsion pH. The emulsion pH was varied widely from 2 to 12. An increase in the pH of the emulsion led to an increase in emulsion stability, viscosity, and viscoelastic properties (G?, G?, (Formula presented.), and tan?), and a decrease in the mean droplet size and zeta potential of the emulsion. Emulsions were characterized as a flocculated structured liquid exhibiting a characteristic crossover frequency within the range of angular frequency studied in dynamic oscillatory measurements. © 2017 Taylor & Francis.
